3 cups gluten free flour mix (follow their instructions on making muffins)
2 eggs or egg substitute
1/4 cup organic cacao powder
1/4 (optional)Cocao nibs if you would like a crunchy texture
4 grated organic zucchinis
1-2 tablespoons of Cinnamon (depending on how much kick you want)
I perfer to add an additonal tablespoon of baking soda for better rise of the muffins.
