2 eggs or equivalent of an egg substitute
1 Tablespoon applesauce or olive oil
8 oz of Pumpkin puree (1/2 can of a 15 oz can)
1/2 tablespoon of cinnamon
1/8 cup stevia powder
2 cups of gluten free baking mix (which I purchase at Coastal Bend Health Food Store here in Rockport, Tx)
1/4 cup water ( slightly more may be needed to get the texture that you want in order to pour into the iron.
Mix all ingredients,
Pour into Belgian waffle maker, should make 3 full size waffles.
